feat(01-03): create Dockerfile for containerization

- Add multi-stage Dockerfile (JDK build, JRE runtime)
- Use Eclipse Temurin 21 base images
- Configure health check on /health endpoint
- Add .dockerignore for efficient builds
- Environment variables for config override
