Match open-gsd/gsd-pi's LICENSE: the repo is owned by the open-gsd org, not the original individual author. Changes the copyright line from '2025 Lex Christopherson' to '2026 Open GSD', making gsd-core/LICENSE byte-identical to gsd-pi/LICENSE.
